When I make a fruit salad, I try to use a combination of different shapes,
colours and textures...for example, grapes, strawberries, mangoes, peaches,
kiwi-fruit...ideally what ever is in season and ripest. If you use bananas
and apples, make sure to add them only minutes before you serve it or it will
go brown...
My trick for fruit salad is that I make it in advance and pour some orange
juice over it, along with finely grated orange rind and sprinkle some
confectioners sugar. This acts like a marinade bringing out the natural
sweetness. Stir it gently a few times when it's in the fridge...Then I add
some mint leaves for colour contrast when serving.
