Bronwyn Ward asked for a good cornbread recipe. I've been using 
this for years and it's never failed to please.


0.75 cup unbleached white flour
0.5 cup whole wheat flour
0.75 cup whole-grain corn meal
4 tablespoons sweetener of choice
5 teaspoons baking powder
0.75 teaspoon salt
1.5 teaspoons EnerG egg replacer
2 tablespoons EnerG soy quick 
2 tablespoons applesauce
1 cup + 2 tablespoons water

Blend dry ingredients. Add applesauce and water. Mix well.
Pour into a non-stick 9-inch pie dish. Bake in a preheated 
375-degree oven for 30 minutes, or until it is lightly browned 
around the edges.

Serves 4 to 6.
