Fresh Vegetable Salad

I came up with this last summer and just made it again, so, thought I'd share

4 stalks celery 
1 or 2 cucumbers
1 red pepper
1 green pepper
1/2 cup frozen corn kernels

1/2 cup cider vinegar
1/4 cup water
1/2 tsp salt
1 tbs dijon mustard
2 tbs honey (or 3 tbs sugar)
1/4 -1/2 tsp pepper
1-2 tbs chopped fresh parsley

Dice vegetables into 1/4 - 1/2 inch dice, add corn and toss to mix.
Combine dressing ingredients and either whisk together or put in airtight
container and shake well. Pour over veggies and chill an hour or so. Keeps up
to a week. I sometimes add chopped fresh tomatoes - but the tomatoes get
mushy after a day or two.
