soy flour

Whenever I have a recipe that calls for flour I usually use 1/2 regular flour
and 1/2 soy flour.  Here is a recipe that I make very often and is a big hit
with my family.

Pumpkin Muffins

1 1/4 quick or old fashioned oats
1 c flour ( 1/2 regular, 1/2 soy)
1tsp baking powder
1 1/2 tsp pumpkin spice
1/2 tsp baking soda
1/4 cup soy milk
egg replacer ( equiv. of 1 egg)
1 c canned pumpkin
3/4 c firmly packed brown sugar
1/2 tsp salt
1 tsp vanilla
Topping
1 tbsp brown sugar
1 1/2 tsp cinnamon

Combine dry ingredients in bowl
Combine wet ingredients in another bowl ( put borwn sugar in this bowl)
Combine wet and dry. Stir
Place in Pammed muffin tins
Place topping on muffins
Bake at 375 for about 25 - 30 minutes

I usually double the recipe.  It sounds complicated but is really simple.
