First I have to say I am not Jewish, we grew up with "potato pancakes" but
they are basically the same thing.
Here is my fatfree/vegan version, sorry about the lack of exact measurements.
scrub potatoes, peel or not, as you prefer. grate
mix 1/3 cup flour with 1 teaspoon baking powder
toss with enough flour mixture to coat evenly and absorb any liquid from
the spuds. (or add 1/4 cup egg beaters to the grated potatoes and probably
1/3 or so cup flour)
add salt and I like grated or minced onion (optional)
Now I cook them in my teflon electric skillet, covered for 5 minutes, then
uncovered, turn, to brown on both sides. No oil necessary.
