storing mushrooms; college food

I also like the Zip-loc produce storage bags with the little holes in
them, but store mushrooms in an open brown paper bag with the top rolled
down a couple of turns, sort of a brown paper bowl, in the refrigerator.
They never get slimy, though after an extended time (say more than a week)
they may start to lose moisture and sort of shrink and shrivel.  But
they're still flavorful and good to eat--if the dish you're making has
liquid, they'll plump back up as would any dried mushroom.

About college food--I teach mostly freshman comp (a 2-semester course
sequence), so I see many students gradually gaining weight that first
semester/year.  What's equally alarming is what happens to many of their
complexions--from fresh and scrubbed to sallow and pimply.  I know the
conventional wisdom today is that fried foods and chocolate don't cause
acne, but I have some trouble beleiving that, especially re fried foods.
Our food service has healthy (or at least fairly healthy) choices
available, but when I eat there most students seem to go for the burger
and fries rather than the salad bar--and there's also a special section of
the buffet-thing where you can get deep fried anything and pay by weight
(I'll refrain from the obvious comment).  Fresh fruits are available, but
not often purchased in my observation.  So, for example, while veg
students (and many so identify themselves to me) could have a vegetarian
soup (there's always one available) and some fruit, most seem to choose
deep-fried vegetables and frozen yogurt.  And many don't get outdoors or
seem to get much exercise.  Just my observations on what to watch out for.
