garbage soup


The GARBAGE SOUP recipe is from THE VEGETARIAN EPICURE by Anna Thomas. Here
it is:


peels from 6-7 large healthy potatoes, at least 1/4 inch thick
1 large onion, peeled and quartered
2 carrots, cut into large pieces
1 small stalk celery, cut into large pieces
1 1/2 quarts water
a sprig of parsley
1 clove garlic (optional)
salt and pepper

Combine all ingredients except seasonings into a soup pot. Simmer on low at
least 1 1/2 hrs until vegetables are soft. Add water as needed to keep
vegetables covered. When veggies are soft, drain and season for clear broth,
or remove celery and garlic and press soup through a sieve for a thin puree.

VARIATIONS: Add other vegetables in small amounts. Or season with herbs such
as bay leaf or basil.

TO MAKE GARLIC BROTH: Use entire recipe of GARBAGE SOUP. Add 1/2 bay leaf, 1
head of garlic (broken into cloves and peeled, about 16 cloves), 1/4 tsp
thyme and a pinch of sage. (Orig. recipe also used 1 1/2 tbsp oilive oil,
just omit.) Combine all ingredients and simmer on low for 30-45 min. Discard
garlic and bay leaf.
