French Toast
(Serves 2)


3 egg whites
1/2 cup skim milk
1/2 teaspoon vanilla
1/8 teaspoon cinnamon


6 bread slices (fat free, if possible)
powdered sugar


In a shallow bowl whisk egg whites, milk, vanilla, and cinnamon.
Prepare skillet with cooking spray and heat on medium until hot.
Dip bread slices into the mixture and place on heated skillet and
cook until browned on one side, about 3 to 5 minutes. Turn over and
cook about 2 to 3 minutes more on other side. Sprinkle with
powdered sugar. (See the end of this chapter for syrup recipes.)


NOTE: This recipe contains no fat.
