Re Pickled Ginger

The red color is either from food coloring (the really bright
red julienned kind especially) or from red shiso leaves.  Put in 
a few red shiso leaves when soaking in the vinegar mixture.  
I found red shiso easily at a local (eastern Mass) nursery with 
a good selection of potted herbs (labeled beefsteak plant).
