pumpkin-soup-4 recipe

500g  chopped butternut pumpkin
1 lg  chopped carrot
1lg chopped apple
1 lg chopped onion
1/2 t mixed spice 
1/2 t nutmeg
1/2 t basil leaves
cracked pepper (taste)
3 cups vegetable stock  (ultracube)

Place pumpkin, carrot, apple, onion, mixed spice, basil, nutmeg and one cup
of stock into a large microwave safe container and cook in microwave
covered for 12 minutes, or until vegetables are tender.

Blend or mash vegetables when cooked and serve hot.

* Please note the vegetable stock is Ultracube and have no animal content
at all. The ingredients are :
sea salt, rice flavor, hydrogenated vegetable oil, sugar, vegetable
extract, dehydrated onion, celery, garlic, pumpkin and spinach powder.

The fat content is 0.6g per 150 ml and I find one of these to be sufficient
for the three cups of water.
