 Subject: RECIPE: Creamy Spinach Soup
 
 This is a recipe from Mary McDougall in the May Vegetarian
 Times.
 
 CREAMY SPINACH SOUP
 
 1 large onion, chopped
 6 cups water
 3 potatoes, peeled and chopped
 3 zucchini, thickly sliced
 2 cups tightly packed fresh spinach leaves
 Freshly ground black pepper to taste
 1/3 cup trimmed enoki mushrooms (optional)
 
 Cook onion in a large pot with 1/2 cup of the water until onions are
 softened.  Add potatoes, zucchini, and remaining 5.5 cups of water.
 Bring to a boil, reduce heat and simmer covered for 35 minutes.  Add
 spinach and pepper and cook for another 2 minutes.  Remove from heat,
 puree, and return to flame for 5 minutes. Add mushrooms if desired and
 serve hot.
 
 Serves 4-6 
 
 Ok.  My opinion: I recommend starting with
 4 cups water and adding another cup if needed.  Also, I think some
 garlic would awaken the flavor of this soup.
