chili-bean-pepper-soup recipe

Chilli Bean and Pepper Soup

1 large onion finely chopped
4 garlic cloves finely chopped
2 red bell peppers deseeded and finely chopped
2 red chillies deseeded and finely chopped
1 1/2 pints vegetable stock
1 1/4 pint of tomato juice or sieved tomatoes
1 tbspn of double concentrate tomato puree
or 2 tbspns of ordinary tomato puree
1 tbspn of sundried tomato paste (if you can get fat free type)
2 tbspns of sweet chilli sauce or more if liked
14 oz can red kidney beans
2 tbspns of finely chopped coriander (cilantro?)
fresh coriander sprigs to garnish

Put some of the stock into a large pan "fry" garlic and onion until soft
but not coloured.Stir in the bell peppers and chillies and cook for a
few minutes.Stir in remaining ingredients and bring to boil.Cover and
simmer for 30 mins.

Cool slightly then transfer the mixture to a food processor and process
until smooth.Return the mixture to the pan adding extra chilli sauce if
liked.Bring to the boil and serve in warm soup bowls garnish with
coriander/cilantro.

The recipe says to serve with a little Avocado Salsa and serve with
Tortilla chips but nice crusty bread would be good.
I have the recipe for the Avocado Salsa but am not sure if Avocados are
too high in fat so if anyone wants the recipe please mail me privately.
It only has a couple of ingredients and is very simple to make.
