    5                    Beets -- peeled
    1 1/2  quarts        Water
    1                    Onion -- chopped
    1      cup           Tomato Puree
    1      tablespoon    Lemon Juice
    1      teaspoon      Sugar
      1/2  teaspoon      Dill Weed
                         Salt
                         Pepper
 
 Grate beets and combine with onion and water in a heavy kettle.  Bring to a
 boil; cover and simmer about  45 minutes.  Add tomato, lemon juice, dill,
 salt and pepper. Cook 45 minutes more. Heat but do not boil.  Serve hot or
 cold.
 Optional sour cream was omitted.

 According to my source, 1/2 cup of raw beets has about: 35 calories, 0.1 g
 fat, 7.8 g carbohydrates, 2.3 g dietary fiber, 1.3 protein, 64 mg sodium,
 265 mg potassium, 13 mg calcium, 0.7 mg iron, 0.3 mg zinc, 4 mg Vit. C, 33 i
 .u. Vit. A, .05 mg B6, .03 mg Thiamin/B1, .02 mg Riboflavin/B2, 88.8 mg
 Folacin, 0.3 mg Niacin.
