SWEET POTATO SAUCE (for veg-rye-pancakes)
serves six over rye pancakes.
2 medium orange-flesh sweet potatoes/yams (about 1/2 pound)
1 handful dried cherries (I used Trader Joes....)
1/2 Cup apple sauce, unsweetend (I used Trader Joes Apple-Peach...)
1/2 cup crushed pineapple
3 cloves roasted garlic
2 Tbsp fresh ginger, grated
1/8 tsp cinnamon
1/4 tsp allspice
1/4 tsp mustard powder
3/4 Cup vegetable stock
- Chop and steam sweet potatoes until soft - don't peel.
- Add all ingredients and simmer until sweet potatoes have disolved.
(Around 20 minutes?). If mixture dries out add more stock or more
pineapple juice depending on your taste.
