sprout-rice-salad recipe

 A tasty way to use mung beans is to sprout them and combine them with brown
 rice (I like basmati), water chestnuts, scallions, some orange juice, some
 soy sauce and some chopped fresh pineapple. It is YUMMY!! This recipe is a
 very loose adaptation of one in the first Moosewood called "Indonesian Rice
 Salad." The original recipe is loaded with oil and nuts, and my adaptation
 (IMHO) keeps the interesting contrasts of flavors and loses the fat. Here is
 an approximation of the amounts I used:
 2 cups (dry) brown basmati rice 
 1 package of mung (or mixed bean) sprouts*
 1 can sliced water chestnuts
 1 bunch chopped scallions
 2 tablespoons soy sauce 
 3 tablespoons orange juice
 3/4 cup fresh chopped pineapple
