A recipe from Peru
Solterito de Queso
1/2 cup of cooked peas
1/2 cup of string beans in pieces
1/2 cup of cooked corn kernels
1/2 cup of nonfat soy cheese, cubed
1/4 cup of chopped red onions
1/4 cup of chopped peeled tomatoes
Juice of 3 lemons
A few drops of sesame oil
Pepper to taste
Chopped fresh parsley
Mix all of these ingredients and refrigerate for at least one hour.
Sprinkle parsley before serving.
