eggless-egg-salad recipe

 1 10.5 oz package Mori Nu Lite Tofu (Firm), drained
 1 tsp apple cider vinegar
 1 tsp honey
 2 tsp mustard
 1/2 tsp turmeric
 2 Tbsp diced celery
 2 Tbsp diced onion
 1 tsp parsely, chopped
 Dash of paprika and pepper to taste
 Crumble tofu into small bowl.  In a separate bowl, combine vinegar,
 mustard, honey and turmeric.  Mix thoroughly and pour over crumbled
 tofu.  Add celery, onion, parsley, paprika and pepper.  Mix
 thoroughly.  Refrigerated approx. 30 minutes to allow flavors to meld.
 Makes three 1/2 cup servings.
