 Twice Baked Potatoes
 
 Bake 2 medium-sized baking potatoes until done. Remove from oven (but don't
 turn it off) and allow to cool slightly. Slice in half the long way round.
 Scoop out meat of potato, leaving some meat intact to form the "shell." (If
 you don't leave some, the potato will fall apart.) Place meat in large
 mixing bowl. Add small amount of skim milk (I imagine PLAIN soymilk would
 also work) and mix. Add 4 T of plain nonfat yogurt (soyyogurt?) and salt,
 pepper, and chopped chives (about 4 T.) Mix well so that no lumps are left
 in the potato. Add 1/4 C. of grated nonfat cheese (cheddar; I'd like to try
 this with that soya cheese!). Mix and return mix to "shells." Sprinkle
 liberally with paprika, and return to oven until slightly browned. Makes 4.
