POTATO - SPINACH BAKE
4 baking potatoes 3/4 c fatfree cottage cheese
1 package frozen chopped spinach 3/4 c fatfree sour cream or yogurt
1 large onion, diced salt and pepper to taste
Bake potatoes till done in oven or micro. Defrost the spinach and drain off
most of the liquid. Saute the onion in water or broth. Scoop potatoes from
their skins (you can eat those separately if you like them), and mash.
Combine potatoes with the rest of the ingredients. Spoon into a sprayed
casserole dish and micro for about 15 minutes, or bake in a regular oven
at medium till just starting to brown.
Note: I would consider sauteing some fresh garlic with the onion next time
