Thanks to Neal in Hawaii I have some more good recipes for mangoes.
Last night I went to a fatfreee potluck dinner in Santa Rosa.
For the main course, I brought the following recipe which was a hit.
6 yams, cooked in microwave
1 bottle Hain's Honey barbeque sauce
4 tablespoons soy sauce
4 ripe mangoes
Cut the cooked yams into the barbeque sauce in a frying pan. Add the soy
sauce and hit until yams are coated. Turn and coat the other side.
Slice the mangoes and arrange in slices with the cooked barbequed yams in
a dish covered with something like foil so you don't have to wash the pan.
Finish with some mango slices on top.
I served the dish at room temperature.
