sweet potato pie
I modified a sweet potato pie recipe from the 'cooking live' program
and cooked it up last week. Here it is as I cooked it.
BTW, it was JUST DELICIOUS!!
2 large sweet potatoes
powdered egg sub., equivalent to 3 eggs.
2/3 cup sugar
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp grated nutmeg
1 cup skim milk
Nuke the potatoes, or bake at 350F for 1 hour. Cool, peel and puree in a food processor. Add the remaining ingredients in order and blend until smooth. Pour into your favourite ff pie crust and bake at 350F for 1 hour.
I used a grape nuts pie crust: 11/2 cups grape nuts
1/8 cup maple syrup
A touch of water to make a bit more sticky
Press into a 9" pie pan.
This pie also freezes very well...highly recommended!!
