OAT BRAN MUFFINS
2 cups oat bran
1/3 cup unbleached flour or Oat flour
ROUNDED 1/2 tsp. each:baking soda, salt, and ground cinnamon
1/4 rounded tsp. baking powder and allspice
1 1/4 cup skim milk
5 oz. apple preserves or applesauce or other fruit (not picky)
2 egg whites lightly beaten
3/4 cups raisins
In a large bowl combine all dry ingredients. In a small bowl whisk all
liquid ing. and preserves.
Pour liquid over flour mixtures stir with spatula and fold in raisins.
Let sit a few minutes so dry ingredients soak up liquids, otherwise
this is a great hockey puck recipe...
Fill 14 lined muffin holes in a tin
Bake at 350 for 22 minutes or until brown

4.3 grams protein
145 grams sodium (so cut out the salt)
