APPLE AND OAT BRAN MUFFINS
1 1/4 cup whole wheat flour
1 cup oat bran
1/3 cup packed brown sugar
2 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
Mix together. Set aside.
1 cup low/non-fat buttermilk
2 egg whites'
2 tbsp oil replacement (applesauce, prune puree, etc)
Mix in a small bowl. Add to dry ingredients until just moistened.
3/4 cup shredded, peeled apple
Mix into batter. Spray muffin cups with non-stick spray and spoon
about 1/4 cup batter into each muffin cup. Bake in a 375 F oven
for 18-20 minutes or until a toothpick inserted near the center
comes out clean. 12 Muffins.
NOTE: can store batter, tightly covered, in the fridge for up to 5 days.
