Here is an excellent veggie taco filling that will keep everyone happy: From
Burgers 'N Fries 'N Cinnamon Buns by Bobbie Hinman:
1 c water
1/2 c bulgur
1/2 c chopped onions
1/2 c chopped green peppers
1 8 oz can tomato sauce
1 1 lb can kidney beans, rinsed and drained
2 tsp chili powder (I use more)
1 tsp cumin (I use more)
1/4 tsp garlic powder (I use fresh garlic)
1/8 tsp cayenne pepper
Bring water to a boil in a small saucepan. Add bulgur. Cover, reduce
heat to low and simmer 15 minutes til water
has been absorbed.
While bulgur is cooking, heat oil in a large nonstick
skillet over medium heat. Add onions and green pepper. Cook
til tender, about 5 minutes. Add tomato sauce, beans, spices
and cooked bulgur. Mix well, mashing beans with a fork.
Cover, reduce heat to low and cook 5 minutes.
Serve in tortillas or over tossed salad to make taco salad
I also put crushed tortilla chips, sliced black olives,
cheese and salsa on the taco salad.
