I always loved beets but threw away the tops. I cooked them this time and
they were wonderful-better then spinach!
1/4 cup boiling water
3 cups grated raw beets
beet tops, shredded
1/8 tsp. basil
1 bay leaf
2 tsp. honey
2/3 cup no-fat plain yogurt
To boiling water, add basil, bay leaf, beets and beet tops. Cover and simmer
5 minutes. Remove bay leaf and add salt to taste. Cool, then add yogurt and
honey. Chill before serving or reheat and serve hot. Makes 4 to 6 servings.
