1 20-oz bag frozen chopped okra
1 green or red pepper, diced
1 onion, diced
1 7-oz can diced green chiles
1 28-oz can tomatoes
3 small potatoes, diced
2 pints water (or enough water to bring the juice from the canned
tomatoes to 2 pints)
Soak the okra in water for 1 hour. Drain. Combine all ingredients and
bring to a boil. Turn down the heat, clamp on the lid, and cook for 30
minutes or longer until sauce is thick.
Serves 6 to 8.
