savory-acorn-squash recipe

This is a recipe that I cooked up last night with an acorn squash I
had just sitting in my 'fridge.  It came out super-flavorful and was
very easy to make.

Savory Acorn Squash

1 whole small acorn squash
1 small chunk ff cheese/ff soycheese, cubed
salt, pepper, cinnamon
nonstick spray

Cut squash in half and scoop out seeds.  Place cut side down on a lightly 
sprayed cookie sheet and bake at 350 for approx. 30-40 minutes, until 
squash is soft.  *Carefully* flip squash halves over so the cut side is 
up (they will be *HOT*); if the ends are pointed and they don't want to 
stand up, you may need to cut the point off the bottom.  Fill the cavity 
of each half about halfway with cubes of cheese/soycheese.  Sprinkle the 
entire thing generously with pepper, a little salt, and a littler bit of 
cinnamon.  Return to oven and bake an additional 5 minutes or so, until 
all the cheese is completely melted.  Let cool approx. 5-10 minutes 
before serving with rice, couscous or another grain dish.  One small 
squash serves 2 as a side dish, 1 as a main dish.
