Green & yellow squash (1-1/4" cubes)
Little red potatoes
Fresh pearl onions
Orange/red/green peppers (1-1/4" squares)
Mushrooms (firm 1-1/2" ones, halved)
Large cherry tomatoes (whole)
Fresh pineapple (1-1/2" cubes)
Poke holes in the potatoes and nuke for about 1-1/2 to 2 minutes. Halve
the red ones, and chunk the sweet. Nuke the squashes about 1 minute.
(this way everything will be cooked to the same doneness) Throw it all
into a big bowl and add your favorite marinade, cover and refrigerate
for 45 minutes, stirring occasionally. Alternate everything on metal
skewers, and toss on your grill. Turn a couple of times until done.
Serve over a bed of rice (mix any pineapple juice on your cutting board
into the rice).
For the marinade, I used a bit of water to saute 5 or 6 cloves of garlic.
