I cooked whole beets (greens removed, but root intact) in the microwave till
tender. After they cooled a bit, I peeled and diced them (on plastic,
because they exude a shocking red juice that stains everything), then tossed
them with some hot stock, balsamic vinegar and fennel seeds.
Simple and delicious - I thought I didn't like beets, but I find that my new
ff veg way of life is giving me cause to give any vegie a second chance. I
tried with brussel sprouts the other night, and I'm sorry to say I still
hate them (but they sure are pretty).
