I just made something yummy and very easy with eggplant...no slimy texture
and no bitter taste for those who are concerned.
I used it as topping for pizza, but it could easily be made into pasta sauce
(add some canned tomatoes) filling for an omelette/crepe, or a stew.
Preheat oven to 350 degrees f.
Into a mixing bowl, chop/cube the following into 1" pieces:
3-4 plum tomatoes
Add two (or more) whole cloves of garlic, and a generous handful of chopped
fresh basil. Sprinkle with dried oregano. red pepper flakes, salt, pepper,
a splash of balsamic vinegar, and a pinch of sugar.
Spray one or two baking dishes with Pam. Dump the vegie mixture in, and
cover with foil. Bake for 30-40 minutes, stirring a couple of times.
