I had bought a delicious spinach pie at a middle eastern bakery and
decided to try to copy it vlf.
1 recipe pizza dough ( I used a mix that makes enough for 1 12" pizza)
1 Package frozen chopped spinach thawed and squeezed dry
2 cloves copped garlic
1/2 tsp hot pepper flakes
1 small onion finely chopped
1 Tbs lemon juice
salt to taste
Prepare piza dough according to directions. While dough rises saute
onions, garlic, and hot peppers until limp. ( I used Pam) Add spinach
and lemon juice. Heat through and salt to taste.
Divide pizza dough in two parts. Roll out each dough ball to a 6-8"
circle. Put half of filling in each. Fold on three sides to cover
filling. The pie should be a triangle. ( Similar to a Hamantachen but
Bake in a 450 degree oven for 10 minutes or until light brown.
Very low in fat and very good. I served it with a cucumber, tomatoe, and
onion salad with seasoned rice wine vinegar and dill.
