This is from _The Complete Vegetarian Cookbook_ by Chris Hardisty.
Pear and Apricot Slices
2 fresh pears
1 cup dried apricots, soakes
1 tablespoon sugar free pear and apple spread
(I couldn't find this flavor, used apricDot)
EnerG for 1 egg replacement
1 cup wholewheat flour
1 teaspoon baking powder
1 tablespoon applesauce
Peel (I didn't) and chop pears into small pieces
mix together the fruit and fruit spread and applesauce
add egg replacer, mix well
mix together flour and baking powder, fold into fruit mixture
spread into Aa nonstick (and/or Pam sprayed or paperlined) 6X8 tin.
Bake at 375F for about 25 minutes or until risen and golden.
Leave to cool, cut into 8 slices
