Recipe: Peaches in Honey Vanilla Syrup
1/4 cup Water
1/4 cup Honey
1 2" Vanilla Bean
4 large Peaches ( or nectarines), pitted, pealed,and thickly sliced
1 Tbs lemon juice
1 pint Vanilla nonfat yogurt
Bring water, honey, and vanilla bean to boil; reduce heat and simmer
Add peaches; raise heat to bring mixture back to a fast simmer. Simmer
until peahes are just softened, 10-15 minutes, depending on ripeness.
Remove from heat; stir in lemon juice. Refrigerate at least 2 hours.
Serve over frozen yogurt.
Serves 4. 137 Calories per serving; 1% Calories from fat; 0g total fat;
0g saturated fat; 0mg cholesterol; 2g protien; 33g carbohydrates; 30mg
sodium; 1.4g fiber
