Servings: 4 to 6
Prep time: 20 minutes
Cooking time: 45 minutes
2/3 cup whole-wheat pastry flour
1 1/2 teaspoon baking powder
pinch salt (optional)
2/3 cup low-fat vanilla soy milk
3 tablespoon honey
2 cups blueberries
Preheat oven to 350F.
Combine the flour, baking powder, and salt. Stir in the soy milk and honey,
and mix until smooth. Pour the batter into a nonstick 8-inch square pan.
Sprinkle the berries on top. Bake for 45 minutes or until lightly browned.
