This dressing isn't fatfree, but very low fat and delicious. I make my
mayonnaise from tofu and find the following recipt very tasty. I use it on
sandwiches all the time.
Tofu Mayonnaise (Cholesterol and Oil Free)
2 - 10 oz boxes of silken tofu (soft or firm to your taste)
2 small cloves of garlic, minced ]
2 Tablespoons cider vinegar
1 tsp. salt
2 tsp. dry mustard (or to your taste)
Place all ingredients in a blender and whip til smooth. Depending on your
blender, you might need to do this in two batches.
The real test for this mayo was when I served it to my mayo officionado
daughter for her artichoke. She loved it.
