This is pretty darn simple. I usually just dump anything in a dutch
oven and simmer.
1 15 oz. can of each black beans, spicy kidney beans and pinto beans.
1 15 oz. can of tomato sauce (low-salt)
1 15 oz. can of diced tomatoes (low-salt)
1 med. onion chopped
3-6 cloves of garlic (depends on my mood)
1 green pepper sliced
1 zucchini chopped
4 Tbs. chili powder
That's it. You throw it all in a dutch oven and let it cook for a good hour.
Somedays I will saute the pepper, zucchini and garlic in veggie broth before
hand, again it depends on my mood. I serve this over cooked elbow macaroni and
top with fatfree sour cream and/or fatfree cheddar cheese.
