        Dr. Art's Low-Fat Carrot Cake
 2     cups     flour
 1     cup       sugar
 2     tsp.       cinnamon
 2     tsp.       baking soda
 1     tsp.       salt
 4     "eggs"  Egg substitute (e.g. Egg Beaters--Fat Free)
 1.5  cups     applesauce
 3     cups     grated carrots (unpeeled)
 3/4  cup       raisins
 1/4  cup       chopped walnuts (1.25 oz)
 1 1/4 second spray of cooking oil (e.g., Pam)
 Spray inside of Bundt pan with PAM.  Mix all other ingredients well in
 mixer.  Bake at 350 degrees for 1 hour.  Let cool 30 minutes before removing
 from pan.
 Serves 16  (1.4 g fat; 160 calories per serving)
 % Calories from Fat = 8%
