1/2 cup unbleached flour
1/2 cup whole wheat flour
1 cup oatmeal, quick-cooking
1 cup Better than Milk (can substitute rice or soy milk)
2 Tablespoons sugar
1/4 cup unsweetened applesauce
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 egg whites or 3 teaspoons EnerG egg replacer + 1/4 cup of water
Beat the ingredients together until smooth. Lightly cover skillet with
cooking spray (canola if possible). Use 1/4 cup for each pancake. When
bubbles form, turn the pancake over and cook other side until golden brown.
Serve with maple syrup or honey, or whatever your favorite is.
Makes 10-12 small pancakes.
