Here is my latest "discovery" Potato bread! I had forgotten that I used
to love this as a kid. I found a recipe, did some adjusting and it
turned out light, fluffy, and yummy-hope this one works for everybody.
for a 1 1/2lb loaf
6oz potato (cooked)
water as needed to combine with mushed potato for total of 1 1/2cups
1 1/2tsp yeast
I used a baked potato that had been in the refrigerator for a couple of
days, mushed it up & added the water for the 1 1/2cups total. Put all of
the ingredients in the machine in order listed, set on white bread,
medium crust and pressed go. It rose tremendously and tasted great too!
