New England Baked Beans
4 cups of cooked beans (2 cups dry) (you can use a mix** or all navy beans)
1/2 onion, chopped
1 carrot, grated
1 apple grated
1 tsp. salt
1 tsp. dry mustard
1/2 cup ketchup
3/4 cup vegetable stock or water
Preheat oven to 350F.
Saute onion in oil for 3 minutes. Add apples, carrots and cook over low
heat for 5 minutes. Mix with remaining ingredients and put in casserole.
Bake, covered, 45 minutes. Serves 6.
**Navy, pinto or kidney beans can be mixed
