lentil-loaf-3 recipe

 animal rights group.
           Lentil Loaf
 1 large onion
 2 Tbsp vegetable broth for sauteeing
 1 cup mushrooms
 1 cup red lentils
 2 cups water
 1 cup grape nuts cereal
 1 cup bread crumbs
 1 Tbsp wheat germ
 1 Tbsp soy sauce or tamari sauce
 1 Tbsp lemon juice
 1 Tbsp dried herbs (I use a mix of basil/oregano)
 salt/pepper to taste
 Rinse the lentils. Cook in water til soft.  Dice the onions and mushrooms 
 and sautee in the veg broth til softened. Transfer onion/mushroom mixture to 
 a large bowl. Stir in the lentils. Add the remaining ingredients.  Mix well. 
 Place mixture in a loaf pan which has been sprayed with Pam. Bake at 350 for 
 30 minutes.
 Note: This produces a very soft textured loaf.
