Potato recipe

Hi,

Here is a fabulous potato wedges recipe that can be used for a main or side:

1 large sweet potato per person (can also use ordinary baking potatoes!)

For seasoning:
1 tsp Sea salt
1 tsp Chilli powder
1 tsp Onion powder
1 tsp Garlic powder
Mix the above dry ingredients; excess can be stored in an airtight container. This mixture should be sufficient for around 6 servings.

Cut each potato in half lengthwise and then in half again lengthwise. Cut each quarter into three or four wedges lengthwise, depending on size of potato. Parboil in water for 5 minutes, drain. Spray a baking sheet with PAM or other spray oil. Arrange sweet potato wedges on sheet, sprinkle with seasoning mixture (to taste) and spray again with oil. Bake in oven 180-200 C for 15-20 mins, checking once or twice.
