Tofu is definitly NOT fermented. Temphe is.
I think the original question, however, concerned non-fermented soy sauce.
Is it "dangerous?" Nah. It's just not worth a tinker's dam. If you want
to get some real "soy" sauce, buy a good quality Tamari. The flavor is
incredible. Is it more "healthy?" For the amounts you normally use, it
can't help or hurt.
Yes, I hear the sodium people screaming. Sodium is not necessarily a bad
thing. If you have sodium sensitive hypertension, you may want to be more
careful about how much you use. If you're like me, splash it on and enjoy.
