I use a teaspoon of artificial coconut flavor to a half cup of plain soy milk or rice milk, a tiny bit of sweetener and a little thickener (arrowroot or cornstarch). I use nonfat plain yogurt and nonfat milk with added coconut extract. You can adjust the thickness depending on how much milk vs yogurt you use and you can add as much coconut extract as you want. If using in hot curries where you might curddle the yogurt, it will help to add a few teaspoons of cornstarch to your milk/yogurt mix first (blend well before adding to hot pan).
