Fat free, Quick and easy, Sooooo Good !
Adapted : Whipped "cream" Expresso Treat
1/4 cup expresso - ( or be creative and use your favorite fruit juice or
syrup ! )
1 tsp liquid sweetner or 4-6 pkts splenda
1/2 tsp vanilla
2 cups fat free cottage or ricotta cheese
1 cup fat free cool whip, thawed
carob or cocoa if desired
combine expresso, sweetner and vanilla.
beat the ricotta ( or cottage cheese) with a whisk to loosen it up.
fold the cool whip into the ricotta
swirl in the expresso ( juice or syrup)
fold lightly to leave it streaky.
pile into 6 dessert dishes or wine glasses and dust with carob if desired.
