I never add sugar to sweet potatoes - they're already sweet
enough for me. I just peel them, slice, boil until done,
add a little cinnamon and a tiny bit of ginger, a little
concentrated frozen orange (or apple) juice, and mash.
The concentrated frozen juice is high in sugars, though,
probably you'd need to check with your guest as to whether
she can eat this or not. If not, you could use milk or
water as the liquid when you mash the sweets.
If you want to, you can do this ahead of time, put it in a
Pam'd casserole dish, and reheat in the oven (covered with
foil so it doesn't dry out) at dinner time.
