Pumpkin Soup

THis is a great fall soup! It sounds kind of gross but trust me it is good! A fun way to serve it is carve out a pumpkin using the pumpkin as a big serving bowl

1 large onion
2 1/2 cups vegetable broth
1 3/4 cups pureed cooked pumpkin
3/4 tsp. dried oregano
1/2 tsp. hot-pepper sauce

In saucepan, cook the onions in 2 tbs. of the broth until softened. Add the remaining broth, pumkin, oregano, and hot pepper suce and simmer for 15 min. It could be a opitional idea to toss in some toasted pumkin seeds too.
