RECIPE: five bean salad

I "invented" this for lunch today, trying to copy a salad I ate in a
restaurant this week.

Serves 2 as apetizer or side-dish.

mix in a large bowl:

1 19oz can mixed beans (*), rinsed and drained
1/2 carrot, grated
1/2 celeri stalk, finely chopped
2 green onions, finely chopped
2 cloves garlic, finely chopped
2 tbsp red wine vinegar
juice from 1/2 a lemon (about 2 tbsp)
1 tsp Dijon mustard

(*) the one I buy is called "salad bar beans mix" and contains red kidney,
romano, lima, black eye and chick peas.
