There is a slight variation in Joy of Cooking - on Mirepoix
Dice 1 carrot, 1 onion and 1 celery heart: the inner ribs
1/2 crushed bay leaf
1 sprig thyme
(1 Tablespoon minced raw ham or bacon) you could substitute the soy bacon
products here I would think for interest, I use the Worthington Stripples in
soups, stews and many other dishes.
Simmer in 1 T. butter (substitute broth etc.)
until vegies are soft. Deglaze the pan with: Madeira
I have an herb garden for the first time this year and I'm really enjoying
the fresh herbs in many dishes.
