Actually, grilling eggplant is one of the best uses of my George
Foreman-esque grill. I've marinated in vinegar/soya/herb combinations and
turned it into delicious sandwiches. I've also brushed it with a tandoori
powder/ff yogurt combo for a yummy Indian dish. Either way, I cut it to
about 1/2 inch thick and cook it for 5-7 min.
Enjoy!--but make sure it's thoroughly cooked for best results!
